So, let me tell you about my go-to comfort dessert: French caramel pudding, aka crème caramel. It looks impressive, but it's secretly super easy to make.

• 2 tbsp water


For the pudding:


• 2 cups milk (I use whole milk, but any milk works)

Let's make the caramel 🍯


This part's like a little magic show.


• In a small pan, add the sugar and water.


• Turn on medium heat and DO NOT stir. Let it bubble until it turns a deep golden color (about 6–8 mins).


• Once the color looks like honey or light amber, quickly pour it into your ramekins or heat-proof bowls. Swirl to coat the bottom evenly.

Time for the pudding 🥄


• In a bowl, whisk together the eggs, sugar, and vanilla until well combined.


• Warm up the milk until just hot (not boiling), then slowly pour it into the egg mixture while whisking.


• Strain the mixture through a sieve (this makes it super smooth).


• Pour it gently over the caramel in each ramekin.


Bake it low and slow 🔥


• Preheat oven to 300°F (150°C).


• Place the ramekins into a deep baking dish and add hot water halfway up the sides (hello, water bath!).


• Bake for 45–50 minutes until the pudding is just set—it should still have a little jiggle in the center.


Let it cool, then chill in the fridge for at least 2 hours (or overnight if you can wait 😅).

• Run a thin spoon or spatula around the edges.


• Flip it onto a plate, give it a gentle shake... and watch that golden caramel sauce flow down the sides.
